Happy Monday! Hope everyone had a nice weekend. I spent most or the weekend chilling with my dogs because I’m cool like that. Actually, I was feeling super tired this weekend so took advantage of some alone time to recharge and catch up on my DVR! I felt so much better today and was pleasantly surprised at work when a coworker brought me a freshly picked avocado from her farm! I can’t wait to enjoy that avocado and wanted to share a recipe that I’ve been obsessing over lately..Avocado Chicken Salad!
1/2 ripe avocado
2 tablespoons fresh pico salsa
1/2 tablespoon lime juice
sprinkle of dried minced onions
sprinkle of mrs dash original seasoning
1/4 tsp sea salt
sprinkle of garlic powder
Mash up the avocado and add rest of ingredients. Continue mashing to combine. Eat on toast or with whole wheat crackers! Yum!
**Tip: preserve the other half of the avocado by pouring lime juice over the surface and sealing in a Tupperware container
