Out & About and a Shakeology Recipe!

Life has been a bit busy lately… We have been making  a real effort to explore new areas in San Diego to get to know our town a little better.  Most recently, we spent a Sunday morning in La Jolla visiting the Mt. Soledad Veterans Memorial cross.  The location of the cross is a gorgeous hilltop offering a breath taking overlook of San Diego.  On the morning that we went, we really lucked out in that there was not a large crowd there.  We spend about 30 minutes at the memorial taking in the view and checking out the memorial itself.  I have already decided that when we have company we will be making  a return trip to Mt. Soledad as it really is a beautiful place to see San Diego.  In addition to exploring San Diego, i have been experimenting with various shakeology recipes.  Scroll down for my current favorite, The Brownie Batter Shakeology!

8 oz Coconut Milk (I use Trader Joes Vanilla Flavor)

1 Scoop or 1 Packet Chocolate Shakeology



Combine all ingredients in a blender Until Smooth.  Enjoy!

Avocados make Mondays better!

Happy Monday!  Hope everyone had a nice weekend.  I spent most or the weekend chilling with my dogs because I’m cool like that.  Actually, I was feeling super tired this weekend so took advantage of some alone time to recharge and catch up on my DVR!  I felt so much better today and was pleasantly surprised at work when a coworker brought me a freshly picked avocado from her farm!  I can’t wait to enjoy that avocado and wanted to share a recipe that I’ve been obsessing over lately..Avocado Chicken Salad!

Avocado chicken salad



1/2 ripe avocado

2 tablespoons fresh pico salsa

1/2 tablespoon lime juice

sprinkle of dried minced onions

sprinkle of mrs dash original seasoning

1/4 tsp sea salt

sprinkle of garlic powder


Mash up the avocado and add rest of ingredients.  Continue mashing to combine.  Eat on toast or with whole wheat crackers! Yum!

**Tip: preserve the other half of the avocado by pouring lime juice over the surface and sealing in a Tupperware container

My Week & A Giveaway!

Its been a crazy week around here! I have been busy working, exploring, and getting everything prepped for an upcoming trip. In other words getting stuff done! Even though it has been so busy, I am still staying on track with the 21 Day Fix Diet and exercising using a hybrid of the fix exercise videos and classes at the gym. Im looking forward to the next couple weekends as we are planning on fitting in a trip to the zoo,a trip to Orange County to ride our bikes on the beach, and maybe a couple brewery trips for the hubby thrown in for good measure :).

So What Wednesday!

Happy Wednesday! Hope everyone is having a fabulous week! I am soooo looking forward to the weekend! My mom got me a spa gift certificate for my 30th birthday so I am cashing it in on Saturday!  This week I’m saying so what if

~ I decided to spend a little extra and book a 3hr spa package! The last 3 months have been stressful with the new move and the job so I decided to splurge!

~ I’m excited for Friday night because my dogs are getting groomed! They are way overdue and looking a little shabby

~I am overly excited for the end of September! I’m spending a long weekend visiting my BFF and her baby in Maryland

~I plan to hit up Beach City a Smoothies after my spa appointment Saturday for a Pitaya bowl.. I’m addicted

~I still have a few items to put away from the great master bedroom flood of 2014.. I’ll get to it eventually

~I’m super excited for breakfast tomorrow..I’m trying the vanilla flavor of Shakeology for the first time!

A Day a Carlsbad Beach

Greg and I recently purchased a Lightspeed Beach Canopy so we decided to hit the beach Saturday to check it out.  We planned on spending several hours enjoying the sunshine and the sand so i had my Shakeology before heading out for the day.  One of my favorites..  TheElvis Shakeology!


Elvis Style Shakeology:

 1 Banana

2 Tsp PB2

1 Scoop Chocolate Shakeology




Combine all ingredients in a blender, pour and enjoy!

We got to the beach around 11am and setup for the day.  Within 5 minutes we were set up and kicking back enjoying the sunshine!  The great thing about Carlsbad beach is that although there were a lot of people there, it didn’t feel super crowded!  We were able to snag a spot close to the water so we could easily walk down and dip our feet in the surf to cool off.  Our friends met us around 1 and we stayed a few more hours before calling it a day and hitting up Beach City Smoothies in Carlsbad Village for Pitaya Bowls!  I had my bowl “Beach City Style” which basically equated to more fruit on the top!  I loved it! It was a great way to get my fruits in for the day and still stay 21 Day Fix compliant :-).  After the beach, our friends came over to hang out and we spend countless hours lounging and laughing the night away.. it was definitely a day for the books.  I fall more in love with San Diego every day!

Hydration Made Easy!

I’m super bummed today because I’ve been feeling a little under the weather so I decided to skip my workout. Even though I wasn’t feeling well enough to workout today I still made a good effort to eat wells and stay hydrated in the hope that I will feel much better tomorrow. One of my favorite ways to hydrate is this wonderful infused bottle called the citrus zinger.


All you do is:

~flip the bottle upside down
~juice your selected fruit into the bottle
~place fruit in the bottom cup and secure
~ fill up the bottle and grab and go! Super easy!

I take mine to work everyday and refill it throughout the day. The flavor of the fruit lasts thought the day and it truly makes me eating to drink more water! For tonight I will be hanging on the couch with my 2 adorable pups, chugging water and catching up on Once Upon a Time with Greg! See you tomorrow for So What Wednesday!

Starbucks Mocha Shakeology

Prior to the fix, i loved stopping by Starbucks in the morning on occasion for a morning mocha.  I have found a way to have my mocha that is 21 day fix friendly!  Enjoy!



1 Grande Iced Coffee from Starbucks.  Black (Unless you want to add milk using a yellow swap)

1 Scoop Chocolate Shakeology


Combine iced coffee and chocolate Shakeology in shaker cup.  Devour

**If you want to put a fun twist on it, add an extract.  I like to add coconut extract to mine but the possibilities are truly endless


Not-so-Fix Friendly Recipe:

On days when i want an extra special treat i make my own version of a salted caramel mocha!


2 Tsp Sugar Free Caramel Syrup

1/2 Tsp Sea Salt


Unsweetened Almond Milk


Blend all ingredients and enjoy!

Weekend Plans!

Happy Friday!! Im so glad it is the weekend because things are finally starting to calm down around here to the point that Greg and I can get out and explore our beautiful city a bit more.  Tomorrow we are heading up to El Cajon, CA to go to a friend’s housewarming party, but tonight and Sunday are free game!  Tonight we are heading down to Carlsbad Beach to catch some dinner by the water and maybe a late night stroll on the beach.  I love heading down to Carlsbad Village.. there are soooo many amazing restaurants and cute shops to explore, not to mention the beautiful village walk.



On Sunday, we may head to La Jolla california which is an area I’ve been wanting to visit since moving here.  Ive heard the views are amazing and that you can go and see seals sunbathing along the coast.  We may even get adventurous and take the bikes out for a spin :-)  What are your weekend plans?







So What Wednesday

It’s So What Wednesday over at Ramblings of a Suburban Mom and I’m linking up! This week I’m saying So What if..

~I cooked enough dinner last night so we could have leftovers for dinner tonight! I love having a night through the week when I don’t have to cook.

~We currently have 2 baskets of clean Laundry needing folded and put away. Our master closet is currently torn apart due to a minor issue so I’m not super motivated to fold laundry

~I insist on being the one to check the mail everyday. 99% of the time it’s just junk mail or bills but I love getting mail!

~I purchase new toys for my dog (JoJo) all the time. It makes me happy to see him get so excited

Trader Joes Favorites!

When i moved here I was super excited to finally get to shop at Trader Joes! I had never been and you can bet on the first weekend here I dragged Greg along and went to experience an amazing grocery store! Since then I make a weekly trip to pick up my staples and usually a few fun things make their way into the cart. Here’s some things I’ve been loving lately:



This bag is only $1.99 and last me a full week. Spinach is so versatile and and say way to get my veggies in!

Greek Yogurt


I love this Greek yogurt! I use it every day as a snack. I love mixing it frozen fruit and stevia. When the fruit thaws it makes a sweet syrup. Talk about an amazing treat!

Frozen Very Cherry blend


This is my go too frozen fruit! I’ve been eating a serving daily and have yet to get tired of it!

Liquid Stevia


This stevia tastes amazing! I’ve already had the bottle over a month and a little really goes a long way! Well worth the price!

Peanut Butter


Who can forget all of the nut butters!? I have a couple but this one is my favorite with chocolate shakeology!

I always try out different mints by the checkout as they are a great option for a little treat after lunch at work or an afternoon pick me up. My favorite at the moment are these:
