21 Day Fix Approved Comfort Food

Happy Labor Day!  I hope everyone has had a fabulous long weekend!  Greg and I have spent most of the weekend relaxing and recharging!  Friday night we took the dogs for haircuts and they turned out sooo cute! Saturday and Sunday we stuck around home and grilled out!  I always love grilling out!  Today will be getting stuff done and prepping/grocery shopping for the week ahead!  Today i wanted to share a comfort food recipe that i put on rotation every few weeks.  The best thing is, its 21 day fix approved!

Onion Beef & Noodles

Ingredients:  

1 lb lean ground beef

1/2 bag baby carrots sliced up

1/2 small onion

1 “packet” clean onion soup mix (recipe from thetipgarden.com):

This will make one “packet” of soup mix:
4 tsp. beef bouillon
8 tsp. dehydrated minced onions
1 tsp. onion powder
1/4 tsp. pepper
1/2 tablespoon coconut oil (or any oil)
1/2 cup water
1 bag whole wheat egg noodles
Directions:
Cook Egg Noodles according to package
Brown meet in pan, meanwhile chop up onions and carrots
Add coconut oil, carrots, and onions to browned meat and cook until carrots and onions are tender
Add “packet” of onion soup mix and water to pan and simmer/stir until well combined
Measure out yellow container of noodles and red container of beef you can also count a partial green for a serving.

Skinny Sausage Wraps

This recipe is one of my childhood favorites! Since then I decided to modify some ingredients to make it my own (healthier) version!

Ingredients:

1 Pkg Turkey Kielbasa

1/2 Block low skim mozzarella cheese

1 Jar low sugar pasta sauce

1/4-1/2 cup shredded part skim mozzarella cheese

8-10 whole wheat lasagna noodles (depending on how many pieces you cut from the Kielbasa

Toothpicks (1 per roll)

Directions:

1.) Prepare lasagna noodles according to directions on package

2.) While the lasagna noodles are cooking, Cut the Kielbasa into 8 or 9 pieces and then cut a slit down the middle of each piece without going all the way through the Kielbasa

3.) Cut the Block of cheese into small slithers so that they will fit into the pieces of Kielbasa.  Insert 1 slice of cheese into each noodle and set aside.

4.) When lasagna noodles are done cooking, drain and allow to cool for a few minutes.

5.)  Set up your baking pan by coating the bottom with a small layer of sauce.

5.)  Wrap 1 noodle around each Kielbasa piece, secure with toothpick and place into the dish.  Continue until all Kielbasas are wrapped and placed in the dish.  Top with remainder of Pasta sauce and a handful of shredded cheese.  Cover.

6.)  Bake for 30-35 minutes.  Remove foil and bake for an additional 5-10 minutes to brown slightly on the top.

7.)  Devour!  Although this isn’t entirely fix friendly i fit it in as follows:  1 serving = 1 roll = 1 yellow, 1 red, 1 blue, 1/2 purple
